Review

This documentary follows Jiro Ono, a Japanese sushi chef behind Sukiyabashi Jiro, the first sushi restaurant to receive three Michelin stars. Jiro is often considered to be one of the greatest sushi chefs alive and this film explores how he got to where he is and how he elevates a relatively simple dish.

The film feels very cerebral with beautiful closeup shots of sushi and the preparation of sushi. The film features extensive interviews with Jiro as well as the people who know him, such as his sons and his former apprentices. The pacing is on the slower end and some scenes do feel a bit too long (or maybe I was just tired from the flight). What immediately stuck out is Jiro’s dedication to perfecting his craft. While Jiro is advanced in age and is already widely acknowledged to be one of the best, Jiro still continues to strive for improvement. For him, perfection is a goal that he constantly inches towards and I respect his attitude and work ethic a lot. Jiro also remains humble and lets his work speak for itself, which I also respect.
